I spent about 6 years in Springfield while at school and I can tell you there is nothing like a bowl from Joe Rogers Chili Parlor.  My compatriot above got the legend behind the two L&#039;s right on the nose.  I now live in that better college town, College Station, TX and they become gravely annoyed when I spell it with two L&#039;s and put beans it.  

I never thought of using bacon in mine but I may have to try this!  Always looking for a new twist...</description>

     I&#039;m from Springfield and the receipe that has been in my family for a century or more is similar, but I start off with rendered-down kidney suet.  One cooks the meat in that and let me telll you.  A taste you won&#039;t forget. Oh, and the two L&#039;s.It&#039;s because Dew&#039;s Chille Parlor (I think it was on South Grand) had a sign out front (this was decades ago) where the painter had misspelled the word and it caught on.
     I&#039;m a HS teacher and I&#039;ve made Chille so often for faculty functions and students that I&#039;m thinking of canning it for sale!  Nobody wants other chille once they taste mine.</description>
